Somehow I’ve been meaning to post this for about, oh, five years now. Not even exaggerating. I first tried these cheddar biscuits back when I was pregnant with my daughter. Who is now five… almost six. Buuuut I only recently perfected them. OK, I know, let’s not go overboard here. They are good though. Real good. They make a great, healthy breakfast.
The original recipe came from a weight watchers mini recipe book. And then I found the Barefoot Contessa’s recipe for her cheddar biscuits. Put them together and… you have healthier yet gooblishiously delicious Cajun Ham and Cheddar Biscuits. But yeah, don’t eat five of them like I did or the whole health part goes out the window. Sigh. I did eat them for dinner with only a side salad though so I felt somewhat justified.
