These Beef and Bean Taquitos are oven fried until crispy, golden brown then topped with white queso, red onion and jalapeño slices for a restaurant quality meal you can make in about 20 minutes.
A great weeknight dinner using ground beef.
When you're tired of all the usual ground beef recipes, try these taquitos! They're so easy to make and customize too so you can make these once a week with different toppings and get a different experience each time.
The base flavors here are: ground beef, taco seasoning, bean dip (you could also use refried beans but I like the extra flavor of using bean dip) all wrapped in a flour tortilla. You could also mix it up and use chicken instead of beef though!
These beef and bean taquitos are oven-fried.
Oven fried simply means that these taquitos are brushed with a small amount of oil and then baked in the oven. The oil helps prevent the flour tortilla wrap from burning and instead produces a beautiful golden brown toasted, crispy texture. The crunchy texture paired with the bean and beef mixture works so well!
If you don't already have a pastry brush, now might be the time to grab one. I use mine for all sorts of things like brushing on sauces, evenly coating egg onto pastries and like in this case, oil onto baked foods to give the outside layer a beautiful and tasty crispy texture. I have a silicon brush that I really love because it's easy to keep clean and dishwasher friendly. If you need one, you can likely find one at your local grocery store or shop pastry brushes on Amazon.
Try different toppings!
Toppings I like to use are white queso, diced red onion and jalapeño (pickled or fresh). However you could try hot sauce, cheddar cheese, lettuce, tomatoes, salsa, sour cream... Anything you would normally put on a taco works great.
Make sure to use flour tortillas.
Corn tortilla are difficult to work with and they will crack when you attempt to roll them up.
If you cannot use flour tortillas for some reason, then you may be able to warm up the corn tortilla in the microwave a little bit so they roll better but again, flour tortillas work best for this recipe.
What size flour tortillas are best?
There seem to be so many sizes to choose from when it comes to tortillas. Really though, you can choose any size. I typically make these taquitos with the large flour tortillas. However, you can use the small or medium sized tortillas, you'll just put less filling in each.
Are these taquitos freezer friendly?
Yes. I recommend freezing them before you bake them or brush them with oil or add any toppings. So fill and roll them up, then freeze them. Let them thaw to room temperature and then brush with oil and bake as directed. Or you can bake them frozen and add a few extra minutes for them to thaw as they cook.
How to Reheat these Taquitos
The best way to reheat these if you have leftovers is to scrape off the jalapenos, red onion and any other fresh toppings you may have put on them already and bake them for 4-7 minutes at 425˚in the toaster oven or regular oven until reheated. Then re-apply toppings.
