Celebrating The Small Things

The older I get, the more I realize why it’s so important to celebrate the small things. Birthdays, anniversaries, promotions, new jobs, the Hallmark holidays like Father’s Day and Mother’s Day… Life is full of hardships, challenges to overcome, disappointments and loss. So when something comes along that’s good, you’ve got to make the most of it!

When I first made this steak and eggs rancheros and share it here, I was going through a touch time. Here’s a little reflection on that time…

When life gives you lemons

Wow, what a week it has been let me tell you. Well, actually I can’t really get into the details at the moment per legal mumbo jumbo, but I can tell you that my life pretty much did a 180 on Wednesday.

Similar to the 180 I did on the highway one time when I was moving all of my belongings back from Florida to Maryland. The tire on my loaded down, beat up Jetta Trek blew out while I was doing 65 (cough 90). My car spun out across three lanes before I was able to regain control and steer it into the median to stop it. Within 30 seconds, I kid you not, a beater of a car pulled right in front of me onto the median and a nice man (I can’t even remember now what he looked like) popped out of his car, jacked up my car and helped me put on the spare tire. I do remember very clearly a little Jesus fish attached to his car. I laughed to myself thinking about the Darwin decal I had always wanted but never got because I wasn’t sure if that was what I believed. I remember that Jesus fish to this day though because that was my turning point. I was 90% sure that while Darwin was a cool dude, and that he may even be right about evolution, that his theory did not disprove forces beyond science. A force that was clearly was trying to help a sister out on the side of the highway.

Since then, there have been many other glimmers of this force helping me out. I continue to question things because there are so many questions to ask. But when I go out on a limb and just accept that there might be something out there (up there?) that wants to help me, I end up pleasantly surprised that this blind faith often leads to experiences I could not have dreamed up.

So this Wednesday as my life did another 180, I’m taking as much control as I can and then letting my faith in good things to come fill in the rest. What other choice do I have really? Sit around and cry? No. I’m leaning in, as much as I hate that term, to my work from home endeavors and we’ll just all have to see where that leads.

When one door closes, another one opens.

This Steak and Eggs Rancheros recipe was born during a time of struggle for me but it was the beginning of a new chapter of my life. Two and a half years later, I can’t imagine where I’d be if I hadn’t experienced that major life change. Which by the way, was a lay off from my job. You can read more about that on my About page. I kept the faith. I knew that things would be okay even though I didn’t really know. And they were. They turned out better than okay.

Celebrate your successes.

Make a big deal about the little things so that you can look back on those times and draw strength from them. When you’re struggling, you can remember that things will get to a good place again. Life ebbs and flows from good to bad. If we can endure the hard times and stay hopeful, we will be rewarded with more good things. So celebrate those good times to enjoy those moments but also to give your future self strength. Don’t believe those feelings that you don’t deserve a celebration. You don’t just deserve to celebrate, you need to.

Yield: 4 plates


  • 4 eggs
  • 4 tbsp butter
  • 1 cup pico de gallo
  • 1 avocado sliced
  • 2 cups frozen diced potatoes
  • 2 tbsp mayonnaise
  • 2 lb flat iron steak
  • salt and pepper to taste


  • Coat frozen diced potatoes in mayonnaise and cook over medium heat in a skillet until golden brown. Salt and pepper to taste then add to plates.
  • Heat oil in a large skillet over medium-high heat. Pat steak dry and season with salt and pepper before placing in skillet then cook each side 4 to 5 minutes. Slice in strips and add to plates.
  • Cook 4 sunny side up eggs in butter over medium-low heat, covered, until the white of the egg on top becomes firm and non-translucent. Add to plates.
  • Place pico de gallo and sliced avocado on the plates and then serve.
