Ingredients
 

  • 2 lbs pork roast
  • 1 onion, sliced
  • 2 potatoes peeled and sliced
  • 3 cups beef broth
  • ½ cup red cooking wine
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp fresh or dried rosemary

Instructions

  • Place pork roast*, onions and potatoes in the crockpot. Pour beef broth and wine over top.
  • Rub top of roast with salt, pepper and rosemary.
  • Cook on high for 2 hours or low for 4 hours or until pork is thoroughly cooked.

Notes

*For enhanced flavor and moisture,  sear your pork before adding to the crockpot by cooking each side of the pork in a skillet with 2 tbsp oil over high heat. Cook each side and the edges until pork is browned all over, about 1 minute per side. Use tongs to rotate sides while cooking.
