Healthy Cajun Ham and Cheddar Biscuits

Somehow I’ve been meaning to post this for about, oh, five years now. Not even exaggerating. I first tried these cheddar biscuits back when I was pregnant with my daughter. Who is now five… almost six. Buuuut I only recently perfected them. OK, I know, let’s not go overboard here. They are good though. Real good. They make a great, healthy breakfast.

The original recipe came from a weight watchers mini recipe book. And then I found the Barefoot Contessa’s recipe for her cheddar biscuits. Put them together and… you have healthier yet gooblishiously delicious Cajun Ham and Cheddar Biscuits. But yeah, don’t eat five of them like I did or the whole health part goes out the window. Sigh. I did eat them for dinner with only a side salad though so I felt somewhat justified.


  • 1. Sauté onion in 2 tbsp butter by placing both ingredients in a glass measuring cup and microwaving for 1-2 minutes, until onions are translucent.
  • 2. In a large bowl, whisk together 2 cups flour, baking soda, salt and cajun seasoning.
  • 3. Using a mixer, add butter and mix until crumbs form.
  • 4. Beat together the egg with the buttermilk then add that to the bowl and mix in.
  • 5. Toss ham and cheese in the 1/4 cup reserved flour. Coat thoroughly then add to the biscuit batter.
  • 6. Finally mix in the cooled, sautéed onion along with any butter remaining.
  • 7. Using an ice cream scoop, fill non-stick or greased muffin tins with batter and then bake at 425˚ for 12-15 minutes or until a fork poked through the middle comes out clean.
