Banh Mi Noodle Bowls

Try these easy and delicious Vietnamese Banh Mi noodle bowls for a new spin on dinner. Made with your choice of pork or chicken, freshly marinated veggies, and rice noodles tossed in a light, flavorful dressing. Ready in 30 minutes!

KEY INGREDIENTS

Ground Pork or Chicken Cooked Rice Noodles | Radish Carrot | English Cucumber Pickled Ginger | Cilantro Sriracha Mayonnaise

DRESSING Rice Vinegar | Fish Sauce Sambal Oelek

Cook rice noodles according to package instructions and cut the radish, carrot, and cucumber into ribbons.

DIRECTIONS

Whisk together rice vinegar, fish sauce, sambal oelek, and lime juice. Add the vegetable ribbons and set aside  to marinate.

Heat oil and cook the ground meat until deeply browned and crispy, then stir in pickled ginger and a little dressing.

Divide rice noodles, vegetables, and meat into bowls and garnish with cilantro, sriracha mayo, and jalapeños.
