Chickpea Edamame Salad and Dip

This chickpea edamame power salad is a healthy lunch or enjoy as a dip with chips for a healthy appetizer. If you love Aldi's chickpea salad, then you'll love this recipe. It tastes  exactly like it! 

Chickpeas | Carrot  Shelled Edamame Dried Cranberries  Bell Peppers | Sea Salt Oil | White Vinegar Garlic Powder | Black Pepper Italian Seasoning | Cumin

INGREDIENTS

You can use frozen, canned or fresh edamame. There's not a big difference in taste no matter which type you choose to go with. So, go for what's most convenient for you.

DIRECTIONS

Toss together the chickpeas, edamame, shredded carrot, cranberries, bell peppers, salt, oil, vinegar and herbs.

Serve immediately or store for later. I prefer to store this salad, and almost all my dips and leftovers, in Mason jars. They are inexpensive and hold up well.

Enjoy with a spoon or as a dip with tortilla chips.
