In a large bowl, combine diced chicken, avocado oil, chipotle chili powder, garlic powder, and salt. Mix well to evenly coat the chicken. Cook chicken until brown.
Whisk together mayonnaise, sour cream, minced chipotle peppers, adobo sauce, minced garlic, and lime juice in a small bowl. Season with salt and pepper to taste.
