This yummy tortellini soup is made with Italian sausage and spinach. A delicious and easy dinner. Great for serving a crowd. Make in a crockpot or on the stove.
Tortellini | Spinach Sausage | Celery Carrots | Onion Garlic | Bay Leaf Chicken Broth
In a dutch oven or large pot, sauté sausage with carrots, celery, and onion, stirring frequently and breaking up sausage into small chunks. Add garlic and cook for an additional minute.
Add chicken stock and bay leaves and bring to a boil then reduce heat to medium-low. Add fresh tortellini and fresh spinach. Cook for 3 minutes then serve.
If using your slow cooker, you do not need to saute the veggies first. Add everything to your crockpot minus the tortellini and spinach. Cook on low for 4 hours. Before serving, stir in the tortellini and spinach.
It's great for making to feed a crowd or to share with neighbors, friends or family.
