Indian Chicken Curry

This shortcut recipe for Indian Chicken Curry has great flavor with minimal ingredients and prep time. Made with cooked chicken and a homemade, spiced tomato-coconut milk curry sauce.

INGREDIENTS

Olive Oil  Red Onion Red Bell Pepper  Garlic Paste Cooked Chicken Unsweetened Coconut Milk Diced Tomatoes Garam Masala Curry Powder Salt and Pepper

In a large skillet add oil over medium-high heat. Once hot, add onion, bell pepper, and garlic. Cook until onions are softened.

DIRECTIONS

Add the cooked chicken, garam masala, curry powder, salt, and pepper. Stir and cook for 2 minutes.

Add coconut milk and diced tomatoes. Bring to a boil, reduce heat to medium-low and simmer for 10-12 minutes to reduce the sauce.

Remove from heat and sprinkle with fresh cilantro Serve hot over rice if desired.
