This roasted red pepper soup is made with fresh or canned tomatoes, Gouda cheese and bacon for a rich and satisfying flavor.
Carrots | Shallots | Thyme Crushed Tomatoes | Gouda Cheese Roasted Red Pepper | Sugar Bacon Bits | Half and Half

Saute carrots and shallots in bacon fat until tender, then stir in thyme, roasted red peppers, tomatoes and sugar.
Add in the chicken stock and puree the ingredients with an immersion blender. Next, add in the bay leaf and allow to simmer.
When the soup is done, add sugar and half and half. Then prepare your grilled cheese using a frying pan and buttering your bread.
Garnish with bacon bits and cubes of smoked Gouda and serve. Enjoy!
