Red Skin Potatoes Sour Cream | Butter Milk | Salt | Pepper Chopped Chives
Peel (optional) and cut potatoes into 1-2" cubes. Boil in a large pot until soft all the way through, about 25-35 minutes. Drain and return pot.
Add butter, milk, and sour cream. Whip until smooth, adding more milk if needed.
Fold in salt, pepper, and chives. Serve topped with a pad of butter and a sprinkle of chives for garnish.
