Southwest Blackened Chicken Salad

You'll enjoy bold southwestern flavor in every bite with this hearty salad. Fresh veggies, black beans, corn and avocado are layered with blackened chicken and topped off with tangy Chipotle dressing.

KEY INGREDIENTS

Chicken Thighs | Olive Oil Smoked Paprika  Chili Powder  Garlic Powder  Greek Yogurt Sour Cream | Lime Chipotle Powder  Black Beans Romaine Lettuce | Avocado Grape Tomatoes Corn Kernels | Cilantro

Add chicken thighs, along with olive oil, and spices to a large mixing bowl. Allow to marinate, if desired. Grill or pan-fry the chicken. Set aside, cover with foil and allow to rest.

DIRECTIONS

Combine Greek yogurt, sour cream, lime juice, and spices in a small mixing bowl. Whisk until smooth. Season with salt and pepper to taste and set aside.

Place shredded lettuce into each salad bowl. Layer black beans, halved tomatoes, corn, avocado and cilantro over the lettuce. Place sliced chicken over the salad.

Drizzle dressing over the salad, and serve with lime wedges. This satisfying salad makes an amazing lunch or dinner.
