Heat coconut oil in a large pan. Add diced onion, bell pepper and jalapeño and cook until vegetables are softened. Set aside.
Bring coconut milk, curry paste, sugar, fish sauce and lime juice to a simmer in the same pan. Then stir in a cornstarch slurry, and add the cooked vegetables.
Add the shrimp and cook until they are fully pink and plumped. Remove from the heat and adjust spices to your liking.
Spoon shrimp and curry sauce over warm cooked rice. Garnish with fresh basil, sliced jalapeños and a lime wedge.
