A simpler yet still delicious Mojito recipe using simple syrup. Try this if you've had trouble getting sugar to dissolve when you've made mojitos in the past.
Squeeze juice from limes into a highball glass then add mint leaves. Using a muddler gently press the leaves to release their oils. Be careful not to tear the leaves.
Add crushed ice to glass then rum, simple syrup and then top off with soda water.
Garnish glass with a slice of lime and a sprig of mint leaves.
