Peel apple then cut into thin slices. Place into small pot with 1 tablespoon butter over medium-low heat. Let cook, stirring occasionally, while you prepare and bake the french toast. Remove from heat when apples become soft.
Next, beat eggs in a flat square pan or a large bowl. Dip each slice of cinnamon bread into eggs and thoroughly coat.
Place coated slices onto greased baking sheet on bake at 400˚ for 5-7 minutes then flip and bake for an additional 5 minutes or until both sides have touches of golden brown. Remove and plate.
Stack two or three pieces of french toast to a plate then top with caramel syrup, a spoonful of Greek yogurt, apples, caramel syrup and toasted walnuts.
