A one-pan wonder made with just a handful of ingredients. Made with cooked chicken, balsamic vinegar, fresh basil, and roma tomatoes topped with melty mozzarella cheese all over a bed of egg noodles. Oven baked and ready in just 25 minutes!
In an 8x8 baking dish, add uncooked egg noodles in an even layer.
Pour chicken broth over noodles.
Cut cooked chicken into bite-size pieces and layer evenly over top of noodles and broth. Season generously with salt.
Drizzle balsamic vinegar over chicken and add basil over top.
Layer diced tomatoes then mozzarella cheese evenly.
Cover with foil and bake at 425˚for 15-20 minutes. Remove foil the last 3-5 minutes to lightly brown the cheese.
Garnish if desired with basil or parsley. Serve hot!
Notes
You can use milk, half and half or heavy cream. Heavy cream will produce a more rich flavor but will be higher in calories. So it's your choice here!Adjust the amount of salt you add to your desired taste. If your cooked chicken is already salted, you may need less or you may prefer more.
