Take everything you know and love about loaded baked potatoes and imagine it as a soup. Sound delicious? It is! And so easy too. You'll love this cream potato soup topped with bacon, sour cream, chives and cheddar cheese.
Dice peeled potatoes into small chunks and add to boiling salted water. Boil for 15-20 minutes or until potatoes are soft all the way through. Drain then return potatoes to pot.
Add butter then milk. Gently stir together until you get a soupy consistency. Add sea salt and pepper to taste.
Spoon potato soup into a bowl and add toppings of your choice.
