Greek "Pita" Boat
I used soft taco boats to stand in for pitas in these Greek-inspired sandwiches. They stand on their own making them super easy to fill.

hummus
½
cucumber
sliced and quartered

tomato
diced

tablespoon
crumbled feta cheese

tablespoon
sliced black olives
Diced onion
red, green or white—your choice! (optional)
Greek dressing
Instructions
Toast tortilla boats until light golden brown. Spread hummus all over the inside of the boat.
Fill boats with mixture of cucumbers, tomatoes, feta, olives and onions (optional).
Top with Greek dressing and enjoy a rich, delicious and healthy meal!
