Cover the chicken breasts with plastic wrap and pound each breast to an even thickness. Sprinkle each chicken breast cutlet with Cajun seasoning
Cook chicken on the stove top, in the air fryer, or on the grill until the internal temperature reaches 165ºF. Transfer chicken to a plate and cover with foil.
Allow to rest for about 3 minutes before assembling sandwiches. Mix together mayonnaise, lemon juice, and Cajun seasoning in a small bowl until smooth.
Once chicken is done resting, layer chicken along with tomato, onion, lettuce and Cajun aioli sauce onto a bun and serve.
