Pat pork chops dry and season on both sides with salt and pepper. Cook pork chops in a skillet with hot oil on both sides until golden brown. Remove, cover with foil, and set aside.
In the same skillet, reduce heat to medium and add butter. Whisk in flour and cook for until lightly browned. Add garlic and cook for 30 seconds until fragrant.
Add thyme, mustard, and broth and simmer. Pour in the cream and stir to combine. Simmer until sauce starts to thicken. Add pork chops back to pan and simmer.
Once pork chops reach 145°F and the sauce is thick and creamy, sprinkle with fresh chopped parsley and serve.
