Greek Orzo Salad

Add some pizzazz to your pasta salad game with this Greek orzo salad! Made with tomatoes, olives, creamy feta cheese, crunchy cucumbers, red onion, fresh parsley and a simple homemade Greek dressing.

KEY INGREDIENTS

Orzo Pasta | English Cucumber Grape Tomatoes | Red Onion Black Or Kalamata Olives Feta Cheese | Fresh Parsley GREEK DRESSING Olive Oil | Lemon Juice Dijon Mustard Greek Seasoning

Cook orzo according to package instructions. Drain let cool     completely. Set aside.

DIRECTIONS

In a small mixing bowl or mason jar with lid, combine olive oil, lemon juice, Dijon mustard and Greek seasoning using a fork or whisk. Or shake if using a mason jar.

In a large bowl, add diced cucumber, tomatoes, onion, olives, feta and parsley. Add cooled orzo and dressing. Gently toss to coat.

This pasta salad is a vegetarian dish, so it's great for bringing to potlucks or offering up as a side if you're hosting your own backyard barbecue.
