This recipe is inspired by the Greek veggie pita wrap served at one of my favorite local lunch spots. I could probably eat these every day! Easy to make! No cooking required. Ready in 10 minutes!
Greek Style Pitas Hummus | Romaine Lettuce Tomatoes | Red Onion English Cucumber Feta Cheese | Black Olives Hummus | Greek Dressing
Thinly slice and dice red onions. Quarter and slice cucumbers. Chop romaine. Dice tomatoes. Lay pitas flat and spread each with hummus.
Top each pita with lettuce, tomatoes, red onion, cucumber, feta, black olives. Drizzle with Greek dressing. Fold and eat like a taco.
TIP: For a protein boost, you can add cooked chicken, steak, or lamb to these pitas. For vegetarians, roasted chickpeas or falafel are great options.
These pack well to make a great lunch to take to work or take on picnics.
