Dried Split Peas | Onion | Carrot Celery | Garlic | Vegetable Broth Fresh Thyme Leaves Bay Leaves | Cooked Ham Ham Bone | Olive Oil
Rinse the dried split peas under cold water and set aside. Cook the vegetables in oil, stirring occasionally, until they begin to soften.
Add garlic and thyme and cook for an additional minute. Stir in vegetable broth, rinsed split peas, and bay leaves. If you have a ham bone add it to the pot.
Bring soup to a boil and then reduce to a simmer, cover and cook for 30 minutes. Then, add diced ham, cover, and cook for an additional 30 minutes.
When the split peas are tender all the way through remove the bay leaves and ham bone and serve!
