Place tomatoes in a pot of boiling water. After about 1 minute, remove them and place them in a pitcher of ice water. After 1 minute, remove from ice water and the skin will peel right off.
Dice the tomatoes and remove the seeds if desired. Place peeled and diced tomatoes in a new large pot and add diced onion and peppers.
Add salt and sugar and let simmer for about 15-25 minutes depending on how crunchy you want your peppers and onions. Transfer to a Mason jar and store in the fridge.
Spicy peppers contain oils that can stay on your hands even after you wash them, so be sure to wear latex gloves when handling the hot peppers.
