Generously season chicken with salt and pepper on all sides. Dry chicken cutlet with a paper towel, pound flat, then cut into bite-sized pieces. Try to keep them equal in size.
In a microwaveable bowl, melt butter, and stir in Panko crumbs, cheese and seasonings. Add chicken pieces and toss to coat.
Place chicken pieces on a prepared baking pan. Roast for 10-15 minutes, or just until chicken has reached an internal temperature of 165˚F.
The chicken nuggets should be golden brown. Serve hot, drizzled with honey.
