Lean Turkey-Potato Enchiladas

These easy enchiladas are so simple to make using just 5 main ingredients. Made with lean ground turkey, diced potatoes, flour tortillas, red sauce and a blend of Mexican cheeses.

Cooking Oil Ground Meat Sliced Black Olives Frozen Diced Potatoes Flour Tortillas Red Enchilada Sauce Mexican Shredded Cheese

Cook ground turkey until browned. Add frozen potatoes and cook until the potatoes are cooked through. Mix in black olives and 1/3 of enchilada sauce.

DIRECTIONS

Add a thin layer of enchilada sauce to a large baking pan. Add 1/4 cup of turkey mixture to the center of a tortilla and top with cheese. Fold up tortilla on all sides.

Place enchiladas in prepared pan. Pour remaining enchilada sauce over tortillas. Sprinkle a layer of cheese over top. Cover and bake for 30 minutes.

Remove foil and bake until the cheese is fully melted. Allow to slightly cool before serving.
