Orange Juice | Olive Oil Sea Salt | Black Pepper Garlic Paste | Yellow Potatoes Chicken Quarters OPTIONAL Thyme, Rosemary or Basil Fresh Parsley
Whisk together orange juice, olive oil, salt, pepper, and garlic. Add extra herbs if desired. If marinating, place chicken quarters into a large ziplock bag along with orange juice mixture.
Marinate for at least 30 minutes or up to 4 hours. Arrange chicken and chopped potatoes in a baking tray and pour the orange juice mixture over the top.
Bake at 400°F for 50-60 minutes or until the chicken reaches an internal temperature of 165˚ and potatoes are fork-tender.
Let rest for 5 minutes before serving. Sprinkle with chopped parsley just before serving.
