Pound chicken breasts into equal thickness. Add chicken and Italian dressing to a large ziplock bag. Refrigerate for at least 1 hour or overnight.
Cook the chicken in the bacon fat until browned and chicken is 165°F. Remove chicken. In the same skillet, cook sliced onion and mushrooms in bacon fat. Add garlic and cook until fragrant.
Combine the gravy ingredients in the skillet. Bring to a boil then reduce to simmer. Return chicken breasts to the skillet and simmer. Spoon sauce, mushrooms, and onions over the top.
Sprinkle cheese each chicken breast. Cover skillet let the cheese melt for 2-3 minutes. Garnish and serve.
