Strawberry Shortcake Cupcakes

Made with fresh strawberries, buttermilk cake and cream cheese buttercream frosting. A delicious and adorable dessert that's perfect for celebrating Valentine's Day, an anniversary, a birthday or any special occasion.


All-Purpose Flour  Baking Powder | Sugar Unsalted Butter | Eggs Vanilla Extract | Buttermilk Cream Cheese  Powdered Sugar Fresh Strawberries Strawberry Preserves

Combine the dry ingredients. In a large bowl, using an electric mixer, cream together butter and sugar. Beat in eggs, one at a time. Mix in vanilla extract. Add dry ingredients to wet ones to form batter.


Spoon batter into cupcake liners. Bake at 350°F for 20-22 minutes, then let cool. Combine fresh strawberries with warmed preserves. Cut out a piece of each cupcake. Fill with strawberry filling. Replace cut-out piece.

For the cream cheese frosting, beat cream cheese in a medium bowl. Beat in butter until fluffy. Gradually add confectioner's sugar in batches, beating at low speed until fully incorporated.

Transfer cream cheese frosting to a piping bag with a nozzle and pipe over each cupcake. Garnish with sliced strawberries and serve.
