In a large bowl, cream butter and two sugars together. Add corn syrup, egg and vanilla. In a separate medium-sized bowl, mix together flours, baking soda, sea salt and nutmeg.
Fold in chocolate chips (and pecans if desired). Using a cookie scoop, spoon onto a prepared baking sheet and bake at 350˚ for 10-12 minutes or until middle is just set.
Remove from oven and let cool. Remove from baking sheet with a thin metal spatula and let cool on cooling rack.
