CAJUN SAUSAGE & SEAFOOD GUMBO
When you combine sausage and seafood, good things happen! You don’t need a lot else. So the stars of this delicious dinner are: Cajun-Style Andouille sausage, bay scallops, cod, and shrimp.
SEAFOOD + SAUSAGE = AMAZING FLAVOR!
Smith’s Cajun-Style Andouille sausage
Celery, onion, red pepper & carrot
In a dutch oven add sausage, carrots, celery, onions and red pepper. Cook for about 7-10 minutes then add garlic.
Add chicken broth, tomatoes and Cajun seasoning then simmer for 20 min.
Add shrimp and bay scallops 6-8 min before serving so as not to over cook. *Be sure seafood is fully cooked before serving.
Serve gumbo hot, over cooked rice.
Try adding corn, okra, crab, shredded chicken or chorizo!
