Caprese Salad  with Chickpeas

This Caprese Salad with Chickpeas  recipe is quick and easy! Made with tomatoes, mozzarella cheese, basil and balsamic vinaigrette dressing. An easy, healthy and delicious side dish!

Grape or Cherry Tomatoes Mozzarella Pearls Fresh Basil Chickpeas Balsamic Vinaigrette


Cut tomatoes in half and add to a large bowl. Drain and rinse chickpeas. You can strain the chickpeas right in the can.


Add chickpeas, mozzarella pearls, fresh chopped basil and balsamic vinegar to the bowl and toss.

Season with salt and pepper to taste and serve immediately or chill in the fridge. If you make it ahead, you may want to add more vinegar before serving.

If the shells come off your chickpeas, you may want to take a little extra time and pick them out.
