Chewy Chocolate Espresso Cookies

These triple chocolate mocha cookies are a decadent dessert! The cookies are soft and chewy with a crisp edge, a hint of coffee, and three different chocolates. Easy to make. Ready in 30 minutes!

Unsalted Butter | Sea Salt Light Brown Sugar | Eggs Vanilla Extract | Flour Unsweetened Cocoa Powder Instant Espresso Powder Baking Soda | Kosher Salt Semi-Sweet Chocolate Dark Chocolate Chips 

INGREDIENTS

Using a mixer, cream together softened butter and brown sugar until light and fluffy. Add eggs and vanilla. Mix to combine, scraping down the sides of the bowl as needed.

DIRECTIONS

Whisk together flour, cocoa powder, espresso powder, baking soda, and salt. Slowly combine dry ingredients with butter mixture. Gently fold in chopped chocolate and chocolate chips.

Scoop 2 tablespoon-sized portions and place them at least 2” apart on the prepared baking sheet. Bake for 10 minutes or until the edges are lightly golden and just barely set.

Gently tap the baking sheet on the counter to sink the center of the cookies. Run a large round cookie cutter around the edge to shape each cookie back into a perfect circle.

Bake for another 3 minutes. Allow cookies to cool completely on the baking tray, then sprinkle with sea salt.
