Prepare ramen noodles in the microwave. Saute garlic and ginger for 1 minute or until fragrant. Add frozen vegetables and toss to coat in the oil and garlic-ginger mixture.
Cover and cook for 7-10 minutes. While vegetables are cooking, in a small mixing bowl, whisk together soy sauce, sweet chili sauce and mirin until combined.
Add cooked ramen noodles and ½ cup of the mixed sauce in with the vegetables and toss to combine. Heat for 1-2 minutes until hot.
Pour over remaining sauce and garnish with sliced green onions and toasted sesame seeds, optional.
