Doctored Ramen Stir Fry
Ingredients
Ramen
- ½ cup water
- 3 oz package instant ramen noodles flavor of your choice
Sauce
- 1 tablespoon sesame oil
- 1 tablespoon garlic paste or powder
- 1 teaspoon ginger paste or powder
- ½ cup low-sodium soy sauce
- ½ cup Thai sweet chili sauce
- 3 tablespoon mirin
Vegetables & Optional Protein
- 20 oz frozen stir fry vegetables
- 2 cups protein of your choice optional
Optional Garnish
- 2 green onions sliced
- 4 tablespoon toasted sesame seeds

Instructions
- Prepare ramen noodles. Add water and ramen seasoning packet to dry ramen noodles and microwave for 1 minute to soft. Toss to evenly coat noodles and set aside.
- Cook veggies. Heat sesame oil over medium heat in a large wok or skillet, until it shimmers. Add garlic and ginger to the hot pan and saute for 1 minute or until fragrant. Add frozen vegetables and toss to coat in the oil and garlic-ginger mixture and then turn heat down to medium-low heat. Cover and cook for 7-10 minutes or until the vegetables are softened as desired.
- Prepare sauce. While vegetables are cooking, in a small mixing bowl, whisk together soy sauce, sweet chili sauce and mirin until combined.
- Combine. Add cooked ramen noodles and ½ cup of the mixed sauce in with the vegetables and toss to combine. Heat for 1-2 minutes or until warmed to your desired temperature. Pour over remaining sauce and garnish with sliced green onions and toasted sesame seeds, optional.
