    You'll need just 8 ingredients to make these muffins plus the streusel topping! So simple and almost as easy, yet so much tastier than a muffin mix.

    • Salted butter. You'll want the butter to be softened to room temperature.
    • Brown sugar. I prefer to use light brown sugar. Dark brown sugar made these muffins a bit too sweet for my taste, but if you have a real sweet tooth then you can definitely use it instead.
    • Eggs. Large in size.
    • Vanilla extract. For best flavor be sure to use real (not imitation) extract.
    • Milk. Whole milk will add richness; however, if you prefer a less rich flavor or lower fat content, you can use 1% or 2% milk.
    • All-purpose flour. Or for a healthier option, you can try whole wheat flour.
    • Ground cinnamon. If you want to add some extra warm spices to these muffins then you can add half a tablespoon of both nutmeg and cloves.
    • Baking soda and baking powder. Make sure these are both fresh and not expired.

    Not at all. To make the streusel topping, combine brown sugar, cinnamon, and butter in a bowl. Using a hand mixer will save time but this can be done by hand as well.

    For a softer, less chewy streusel topping, try adding a tablespoon of flour and a pinch of baking powder.

    Ingredients 

    Muffins

    • ½ cup salted butter softened
    • 1 cup light brown sugar divided
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 ¼ cup whole milk
    • 3 cups all-purpose flour
    • 1 tablespoon ground cinnamon
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder 

    Streusel Topping

    • 2 tablespoon butter
    • 1 cup brown sugar
    • 1 tablespoon ground cinnamon
    • 1 tablespoon flour (optional)
    • 1 pinch baking powder (optional)

    Instructions

    • Preheat and prep pan. Preheat oven to 425°F and line a 12-count muffin tin with oil, butter, or liners.
    • Make muffin batter. Using an electric mixer, cream together brown sugar and butter on medium-high speed until smooth and creamy.
      Add eggs, vanilla, and milk and mix until well combined.
      Reduce speed to low and mix in the flour, cinnamon, baking powder, and baking soda until the dry ingredients are just combined with the wet ingredients.
    • Make streusel topping. In a small bowl, mix together softened butter with brown sugar and cinnamon. Add flour and baking powder if you prefer crumb-like streusel.
    • Fill muffin tin. Scoop batter into each muffin cup, filling about ¾ full. Sprinkle a little bit of streusel over each muffin. Evenly distribute until all streusel topping is used.
    • Bake. Move muffin pan to the oven and bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean; then remove from oven.
    • Cool. Allow muffins to cool in the pan for 5 minutes before removing then serve.

    Notes

    Add baking powder and flour to streusel for a puffier, more crumb-like streusel topping. For a more caramelized, chewy streusel, leave these out.

      Do you use a muffin pan or a cupcake pan?

        A regular sized cupcake pan. If you wanted to use a larger muffin pan, you can. You will have fewer muffins and you will need to add bake time, as needed, until a toothpick inserted into the center of a muffin, comes out clean. Thanks for asking, Margaret.

      Can the cinnamon muffins be made with coconut flour (or other glutton free flour)?

        Hi Sue! Yes, you can use gluten-free flour. Typically gluten-free flours can be directly substituted for all purpose flour at 1:1 ratio but check the package to see what your brand's recommendations are.
