This is a classic recipe for Shepherd’s Pie, a traditional Irish dinner made with any type of leftover meat but usually beef or lamb, a mix of veggies, gravy, and mashed potatoes to top things off.
Russet Potatoes | Butter Sour Cream | Pepper Parsley | Salt | Onion Ground Beef | Beef Gravy Fresh Rosemary | Red Wine Mixed Diced Peas And Carrots Cheddar Cheese
Peel and boil potatoes until soft. Drain. Add butter, sour cream, salt, pepper and parsley then beat with a hand mixer on high until smooth. Add cheese if desired.
Over medium-high heat, cook ground beef, peas, carrots, and onion for 5-7 minutes. Add rosemary and gravy. Add optional red wine. Bring to a boil then remove from heat; stirring frequently.
In a baking dish, layer in cooked beef and vegetables with gravy then top with a layer of mashed potatoes. You can use a fork to make a pattern on the top, or just smooth the top with a spatula.
Bake at 400˚for about 15-20 minutes or until top of potatoes is golden brown.
