EASY  SHEPHERD'S PIE

This is a classic recipe for  Shepherd’s Pie, a traditional Irish dinner made with any type of  leftover meat but usually beef or lamb, a mix of veggies, gravy, and mashed potatoes to top things off.

INGREDIENTS

Peel and boil potatoes in a large pot over medium-high heat until soft; about 10-15 minutes. Drain and return potatoes to pot. Beat in butter, sour cream, salt, pepper and parsley until smooth.

Cook ground beef, peas, carrots, and onion for   5-7 minutes over medium-high heat. Add rosemary and gravy then salt and pepper to taste. Bring to a boil them remove from heat; stirring frequently.

In your baking dish, layer in peas and carrots, then layer in cooked beef and vegetables with gravy.  Finish by layering with mashed potatoes.

Bake at 400˚F for about 15-20 minutes or until top of potatoes is golden brown.
