These Greek veggie tacos are great for an extremely quick lunch or dinner without sacrificing flavor. They are healthy too!

Soft Taco Shells Hummus  Cucumber Tomato Red Onion Leafy Green Lettuce Kalamata Olives Crumbled Feta Cheese Greek Dressing

INGREDIENTS

Spread 1 tbsp of hummus onto each soft taco.

Fill tacos with cucumbers, tomatoes, red onions, olives and crumbled feta.

Top with 1 tbsp of Greek dressing on each and serve!

Done in 10 minutes. Truly. These Greek veggies tacos are deliciously simple and full of flavor. So great for a busy weeknight and perfect for hot summer evenings.
