For the record, I'm not a vegetarian. I just don't think you always need to have meat in your meals. Like these veggie tacos. I had them for dinner tonight.
Was I sad that they didn't have meat? Nope. Did I even realize that something was missing? Honestly, no.
If you, however, are missing meat here, you can add chicken or steak to these tacos. Both would taste great with the rest of these flavors.

Here's a look at everything you'll need to make these no-cook Greek tacos.

- Flour tortillas
- Hummus. Any flavor.
- English cucumber. Regular cucumber works too.
- Roma tomato. Grape or cherry tomaotoes work well too.
- Red onion
- Leafy green lettuce
- Kalamata olives
- Crumbled feta cheese
- Greek dressing. Bottle or make your own Greek dressing.

Taco lovers: you will love this tool for serving tacos!
You really don't need anything special to make these. But one thing I found help to making these soft sided tacos is a taco stand. If you're a serious taco person, you may want to pick up your own set of taco stands. They're especially useful for filling and serving soft taco shells.
Soft flour tortillas work really well for these tacos, but you can also use corn tortillas, pita bread, or even lettuce wraps if you want a lighter, low-carb option.
Absolutely! Feta cheese already provides some protein and adds to the authentic Greek flavor but you can add meat — Grilled chicken, steak, or lamb or add chickpeas for even more protein.

Greek Veggie Tacos

Ingredients
- 3 flour tortillas
- 3 tablespoon hummus
- ½ cucumber sliced and quartered
- 1 roma tomato cubed
- 3 tablespoon red onion thinly sliced and chopped
- ⅓ cup leafy green lettuce chopped
- 9 kalamata olives sliced
- 3 tablespoon crumbled feta cheese
- 3 tablespoon Greek dressing

Instructions
- Spread 1 tablespoon of hummus onto each flour tortilla.
- Fill tortillas with cucumbers, tomatoes, red onions, olives and crumbled feta.
- Top with 1 tablespoon of Greek dressing on each and serve.
Notes
- Feel free to substitute Greek dressing with tzatziki sauce.
