Heat a skillet to medium-high and add oil, potatoes and onion. Toss to coat potatoes and onions in oil. Cook, stirring occasionally, until golden brown.
Add ground turkey and cook until lightly browned, about 5-6 minutes. Add in tomatoes, then add garlic and cook for another minute.
