These delicious cupcakes are so easy to make and are so festive! These are amazing for fall or winter weddings or serve them at your holiday party. These flavors are inspired by the famous Taylor Swift cookies, made with chai tea and eggnog icing. The perfect holiday treat if you're short on time but want to make a big splash!
2 to 4cupssifted powdered sugarmore or less to taste
¼cupeggnog
1tablespoonbourbon or brandy(or use additional eggnog)
1teaspoonvanilla extract
Garnish
24star anise podsoptional
24cinnamon sticksoptional
Instructions
In a large bowl, whisk together cake mix with nutmeg, cinnamon, and salt.
Add eggs, milk, and melted butter. Stir until combined.
Using a cookie scoop, spoon two scoops into each cup or a lined cupcake tray.
Bake in a preheated oven at 350˚ for 8-10 minutes or just until a toothpick inserted into the center of a cupcake comes out clean. Be careful not to overbake or cupcakes will dry out.
Remove from oven and carefully remove cupcakes from the hot pan and let them cool for 10 minutes. Use a fork to gently lift cupcakes from the tray if needed.
While cupcakes are cooling, blend frosting ingredients together in a bowl.Transfer frosting to a piping bag with tip of your choice. Frost cupcakes in a spiral starting with the outside edge, working towards the center.
Garnish each with a star anise pod and a cinnamon stick. (optional)
Notes
Butter is the base of the buttercream frosting. Make sure it’s fully softened to room temperature so you don’t end up with lumps in your frosting. For best results, let butter sit out overnight or for at least 1 hour.Spiked eggnog typically has some type of brown liquor in it so add a splash of bourbon or brandy to the buttercream frosting if you'd like! Substitute 1 tablespoon of eggnog with liquor.Sift or whisk the powdered sugar in a bowl by itself to remove clumps. This will ensure frosting is silky smooth.
