Spray butter
2tablespoonLingonberry jam

Instructions
Place berries, lemon juice and 1 tablespoon sugar in a small pot over medium/high heat and cook for about 10 minutes or until berries turn into a chunky syrup. Stir as needed to prevent sticking.
In a mixing bowl, stir together remaining ingredients to form a batter.
Spray a large, flat pan with butter. Pour batter in and rotate pan to get batter to fill the pan in thin layer. Cook for about 2 minutes, then flip. Cook for 30 seconds on the other side, then fold crêpe in half then in half again. Remove with a spatula and place on plate.
While the crepe is cooking, whip together the lingonberry jam with butter using a fork.
Spoon the berry compote on top of the crêpes. Using a melon scoop, place the lingonberry butter on top of berry compote. Dress up the plate with a few fresh berries (if you have them) and powdered sugar and serve (yourself!).
