Fancy name, fancy looking, yet no fancy skills required.
Maybe because these berry compote crepes have a French fancy name, it seems like making these would involve multiple steps and culinary expertise but it's simply not true. Crepes are easy to make and so is the compote topping.

Crepes are a good way to feed a crowd but since they can take awhile to cook, it's best to prepare how many you'll need ahead of time and then warm then in the oven before serving.
Try different toppings with these crepes
You can top your crepes or stuff them with all sorts of yummy things. Here are a few ideas: Stuff with bananas, strawberries and Nutella, top with lemon curd, top with blueberry syrup, enjoy with lingonberries and butter or try stuffing with sweetened cream cheese and sprinkle with cinnamon and powdered sugar.

Berry Compote Crêpes
Ingredients
- 2 cups frozen or fresh berries choose your favorites!
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- 2 cups flour
- 1 ½ cups milk
- ½ teaspoon salt
- 1 tablespoon sugar
- 3 eggs
- 4 oz beer
- Spray butter
- 2 tablespoon Lingonberry jam
- 2 tablespoon butter softened
- Powdered sugar optional

Instructions
- Place berries, lemon juice and 1 tablespoon sugar in a small pot over medium/high heat and cook for about 10 minutes or until berries turn into a chunky syrup. Stir as needed to prevent sticking.
- In a mixing bowl, stir together remaining ingredients to form a batter.
- Spray a large, flat pan with butter. Pour batter in and rotate pan to get batter to fill the pan in thin layer. Cook for about 2 minutes, then flip. Cook for 30 seconds on the other side, then fold crêpe in half then in half again. Remove with a spatula and place on plate.
- While the crepe is cooking, whip together the lingonberry jam with butter using a fork.
- Spoon the berry compote on top of the crêpes. Using a melon scoop, place the lingonberry butter on top of berry compote. Dress up the plate with a few fresh berries (if you have them) and powdered sugar and serve (yourself!).
