Bake brookies. Prepare brookies according to package directions except scoop batter into greased cupcake pan or directly onto a baking sheet to form individual cookies.
Cool. To cool brookies quickly after baking, place sheet in freezer for about 10 minutes.
Add ice cream. Smoosh one scoop of ice cream between two brookies.
Add sprinkles. Sprinkle the edges with the edible topping of your choice!

Use a cookie scoop to place 1 scoop of batter into each cookie cup.
If you don't have an ice cream sandwich baking pan, you can use a muffin pan instead.
