Add lime juice to frozen leftover watermelon puree then layer with kiwi and yogurt in a popsicle mold with sticks, to create these fun watermelon popsicles that look like the real deal. Kid-friendly and healthy too!
Puree frozen watermelon with the lime juice using a blender or food processor.
Spoon watermelon-lime puree into each popsicle mold, filling each ¾ full. Freeze for at least 30 minutes or until it's firm enough to add another layer.
Remove from freezer and add a tablespoon of Greek yogurt to each popsicle. You may need to press the yogurt into the mold to eliminate air pockets. Freeze for another 30 minutes.
Puree kiwi and layer that on top of the frozen yogurt. Freeze for at least an hour or until completely hardened.
Notes
This is a great use for leftover watermelon! Cut watermelon into chunks before freezing so it's easy to add to your blender or food processor.
Run the popsicle container under warm water to loosen from mold then slide it out.
