Creamy crockpot Tuscan ravioli with sausage is an easy, flavorful dinner made with spinach, tomatoes, garlic-herb cream cheese, and cheese ravioli. Just 6 simple ingredients! Make this rich, comforting meal in the slow cooker or on the stovetop.
1lbItalian breakfast sausageuse turkey sausage for a healthier option
28ozpetite diced tomatoes
1cupchicken stockadd more as needed to thin your sauce
7.5ozgarlic and herb cream cheeseuse whipped for smoother sauce
1tablespoonvermouthoptional for added flavor
25ozfrozen or fresh cheese ravioli
1cupfresh spinach leavesfrozen spinach works too

Instructions
Add sausage. Cut up sausage into bite-size chunks. Place in crockpot, spreading out to cover the bottom of the crockpot.
Add tomatoes and chicken stock to your slow cooker.
Add cream cheese to the slow cooker, spreading it out to layer on top of the sauce.
Optional: If you want to add Vermouth, drizzle it in.
Layer frozen ravioli on top of sauce and cover with lid.
Cook on low for 4 hours or high for 2 hours.
Lift lid and gently fold in spinach and coat ravioli with sauce. Cook for an additional 10 minutes (or until spinach is wilted but still bright green) then serve.
