Heat a large skillet over medium-high heat.Coat with cooking spray or butter and add 8 eggs. Stir and cook just until eggs are set but still a little wet*, about 5 minutes.
Lay out 4 tortillas then layer each with ¼ of the scrambled eggs, ¼ cup cheddar cheese, and 2 slices of bacon.Wrap 3 sides in, then roll closed.
Wrap each burrito tightly in plastic wrap and refrigerate or freeze.
To reheat from frozen: Microwave each side for 1 minute.To reheat from refrigeration: Microwave each side for 30 seconds.
Serve with hot sauce if desired.
Notes
*You want to slightly undercook the eggs so that when you reheat these, the eggs do not overcook.Reheat time may vary depending on wattage of your microwave. Adjust as needed.
