Tender chicken thighs are glazed in a sweet sauce of apple juice, brown sugar, garlic, ketchup, soy sauce, and vinegar. This is a favorite, quick weeknight dinner served over rice with a steamed vegetable like broccoli. It is always a crowd pleaser and it's ready in just 30 minutes!
1.5lbboneless, skinless chicken thighscut into bite-sized pieces
1teaspoononion powder
1teaspoongarlic powder
For the Sauce
2tablespoonvegetable oil
1cupapple juice
1cupbrown sugar
2tablespoonapple cider vinegar
3teaspoongarlic paste
2tablespoonsoy sauce
⅔cupketchup
For Garnish
2scallions thinly sliced
4tablespoontoasted sesame seeds
Serve with
2cupscooked white or yellow rice
2cupssteamed broccoli florets
Instructions
Pat chicken pieces dry and season generously with salt, onion powder, and garlic powder by rubbing on all sides.
Heat oil in a large skillet, over medium high heat, add chicken pieces.
Cook chicken, stirring to evenly cook all sides, until done. About 3-5 minutes.
Add apple juice, brown sugar, garlic paste, vinegar, garlic, soy sauce, and ketchup. Stir to combine. Cook over medium high heat until sauce thickens and coats the chicken.
Garnish with scallions and sesame seeds.
Serve over cooked rice with broccoli.
Notes
Cook time may vary depending on size of chicken pieces. Cook to an internal temperature of 165ºF. Juices will run clean and inside will not be pink when cut in half.Cooking the sauce until it thickens is crucial. The apple juice and brown sugar will help with the sauce thickening and will caramelize creating amazing flavor. Be patient and let the magic take place.
